Catching up . . .

I started a 30 days of photo thing at the beginning of April and due to a few events I have neglected to keep up . . . so here I am catching up :)

Day 12: A picture of something you love

I would love to travel Europe some day, preferably backpacking if I have the balls to do something like that. I may even settle for some travel group that allows me to see like 3 countries there.
















Day 16: A picture of someone who inspires you.


Duh I'm gonna pick my mom on this one. Shes an amazing mother and done amazing things with her life. I would be blessed to be 1/2 the woman she is when I'm her age :)


















Day 17: A photo of someone who has made an impact on your life recently.



Sorry buddies . . . couldn't think of anyone for this one. Theres lots of people who make impacts on my life daily . . . but nothing huge or recently :(



















Day 18: A photo of your biggest insecurity.




My weight is my biggest insecurity, it holds me back from doing many things . . . I dont like people hugging me b/c then they can feel how big I am, I dont like walking in front of people b/c of my booty, I dont like shopping with friends b/c they'll know my size . . . there are other things, but this should be short.

Updating

In case you wanna know where I'm at with this . . .

Chicago

I feel the need to post things from my past weekend of Chicago :)
 
Start the weekend with about 2 hours of construction. Tempted to count the # of construction cones, but I resisted the urge.























Saturday we stopped by Wrigley Field . . . took some pictures

















Stopped by a ton of sports stores in the area . . . so freaking cold out I wanted a hat (however I refused to pay $25 for a Cubs hat I'd wear 1 time)







Apparently you dont go to a Cubs game without checking out the Cubby Bear, fun bar that we stopped at to get some drinks.





Next stop . . . Wrigley field and not just the outside.
Very cool ball park . . . very much unlike what I expected ( dont ask me to explain what I expected)




















Go to Chicago . . . MUST go to Gino's East, delicious . . .




















Best sight to see/taste in Chicago . . . deep dish cheese pizza. The plastic silverware and paper plates/cups makes it feel like a picnic ;)




















End of the day eventually came with a ride at 11pm on the El . . .





















Ahh . . . Chicago Love :)

Maaaaamaaaaaaaa

HAPPY MOTHER'S DAY to the best mother in the face of this world.


I just wanted to shed a little love to my mother today, for all the stuff she's put up with the past 28 years. My mom is someone who . . .
- Loves me no matter what
- Encourages me through my worst moments
- Accepts when I'm having a bad day and sometimes takes it out on her
- Listens to my problems and tries to tell me the right thing to do
- Is always there for me even when I want to be alone
- Always dancing and singing along with me to make me laugh
- Always takes my sides on issues (even when I'm the wrong one)
- Encourages my crazy baking/cooking ideas
- The biggest support system of my life
























Thanks mom . . . for EVERYTHING!!!

Status

Its been a week since my little complain fest of all the crap I have to do before the end of the school year. I feel the need to express what has been finished and what hasn't.

1. Spaghetti dinner
2. Prom
3. Fieldtrip with me and 13 students (oy vey) . . . this is today
4. Open house at school

Things are getting there :) - Thats a nice thing to be able to say . . .

So for the past 7 weeks I've really tried to workout more/eat better and I can honestly say its paying off. I've been able to loose a total of 12 lbs and actually feel like its possible to loose more.
Cheer me on, I'll let you know how i'm doing :)

The magic potato

My parents have been great leaders in the kitchen. I feel all that I do/can do is because of them . . . my joy of baking comes from them, and the drive to challenge myself to try new things in the kitchen comes from them. however I must have just missed the instruction on how to make mashed potatoes . . . who doesn't know how to do this, apparently me.

So here is my experience of making mashed potatoes . . . a photo journey :)




 So did you know you have to peel them . . . umm yea . . . :)


This would be after my fun experience of waiting (45 minutes) for them to boil . . . I was able to wash all my dishes while waiting for them. 


Mixing process . . . I added some spices and junk to add a little zing . . . it was delicious looking. 


And the final product with a touch of veggies and protein. The meal as a whole was kinda eh . . . but the potatoes were good and even better b/c I made them :)
