Photo Post : Virgina Day 2

Today we got to a late start ( :( ) . . . however we were able to get to the beach and have some grand time in the sand.

We started by going to the farmers market, which let me tell you was a bit of a let down . . . VA farmers markets have NOTHING on MN farmers markets . . . theres no selection and very little appealing food. Sadness . . .

Off to the beach!!!

This is how I could live my life daily . . . might just be what I need to become . . . a beach bum. 

After the beach we managed to pick ourselves up some Salt Water Taffy . . . yum!

And do a little bit of shopping (the nail polish . . . changes a different color in the sun). 

We finished shopping then came home to Kate's Sesame Ramen Noodles . . . and . . . Peaches with Ice cream . . . :)

Photo Post : Packing

Currently packing right now for my trip to VA . . . leaving in 6 hours and counting . .

Lack of motivation

I'm having a little bit of an issue this week with working out and eating healthy.

Two people I know joined a weight loss program and had some life stuff come up where they couldn't continue to go for a few months, within the last two weeks they decided to go back and each were able to loose 3 lbs. I'm super happy for them dont get me wrong and I'm so glad they went back and that they're happy . . . but I'm super bummed out.

I dont mean any ill will towards these people what so ever so dont get me wrong in that context, however these two people did nothing to regulate their weight . . . they didnt really intentionally workout, they didnt eat right or track their calories or anything of the sort and still within two months were able to loose 3lbs. I just went back and looked at my weights from the past two months . . . and I too . . . since the end of May have only lost 3lbs. What the eff . . . the last month I have been working my butt off, making sure I run/walk/ellip at least 25 miles a week and making sure i burn off 3500 calories for the week . . . and I loose the same amount as people that dont try at all. This is very discouraging to me

Part of me wants to just throw in the towel and be done with caring, just let nature take its course and let my body to what it wants instead of trying so hard just to not measure up. :(

Recipe Post: Dill Pickle French Fries

If you're anything like me you enjoy that bitter sour taste in your mouth when you eat the greatest thing ever made . . . Dill pickle potato chips. I'm tellin ya, pickles are great but these chips are like heaven sent. I was poking around today and found a recipe (on one of my favorite blogs . . . Peas and Thank You) for Dill Pickle french fries.

With these simple ingredients you can make a wonderful batch of fries with a twist of flavor. I enjoy  my fries from time to time but adding this zest to the fries is worth making them over and over again.

These fries were delicious. I would recommend any one making them that are bored of regular fries. And just think . . . McDonalds, Wendys, Arbys, Burger King . . . they dont make these thats what makes them even better. ;)

Photo Post: Run

A date everyone should mark down . . . The day Cheri ran 3 miles straight.



I've told many people that my goal is to be able to have the endurance to run 3 miles then I'll sign up for a 5k, I dont know why the concept is so intimidating to me, but it is. Well folks . . . I did it :) I ran 3 miles straight. I ran at a 5mph speed and was able to finish 3.10 miles in 37.55 minutes . . . I'm so happy about this.

My next goal in fitness . . . out door running  . . . wish me luck!!

Photo Post

I've had the great honor of being introduced to Zooey Deschanel's blog : Zooey's Miscellany : I have to say I enjoy this blog, what I enjoy most is that she does these photo posts and she does them everyday. I'm pretty pathetic when it comes to blogging each day, so new goal for myself. Each day I will have a photo post . . . ahh love it!

(I'm gonna put this on Facebook, then all my friends will read it and then they'll smile b/c I'm mentioning them right now . . . and if they post a comment I'll send them a post card . . . see how many comments I get) HA!

SPIN CLASS


No lie this is my favorite 45 minutes of the day. I've been able to go to spin class 2x a week for the past two weeks, and I will continue to do so because it is that fun of a class.

I hear Bob Harper (harper? i think its harper) the male trainer on The Biggest Loser teaches a spin class, and I think I could keep up with him. That would be a dream of mine, to attend one of Bob Harper's spin classes.

Panini Heaven

Not too much going on in my life.
This week I decided to make a change in the diet/weight loss area of my life. I'm really gonna take a good look at what I eat and put into my mouth :)

Today for lunch . . .
PANINI

Ingredients:
Ciabatta bread\
Spinach
Red Onion
1/4 Avocado









To Do:
Spread avocado on bread, some how arrange spinach and onions in between bread pieces. Place on panini press . . . oh wait I dont have one of those, I used my george forman mini grill (and then put a pot w/ 3 cans on top of it so it pushed down on the panini). Three minutes then turn over and press again for another few minutes.


Finished product



Added a side of fruit (strawberries, pineapple and bananas) and made for a beautiful lunch. 

For dinner it was zucchini lasagna . . . didnt come out too beautiful looking, but maybe the next time I make it I'll post the recipe. 

This week has been super in the workout field :)
- Managed to run 2.75 miles out of 3 (ran for 2 miles straight, then walked for a 1/4 of a mile but finished off with .75 mile run) :)
- My 5k distance time is now at 39:18 . . . which coming from like 45 minutes, makes me feel amazing. 
- I accomplished going to a spin class this week, AWESOME, pretty sure I'll be doing spin 2x a week if thats manageable :)
