I've had the great honor of being introduced to Zooey Deschanel's blog : Zooey's Miscellany : I have to say I enjoy this blog, what I enjoy most is that she does these photo posts and she does them everyday. I'm pretty pathetic when it comes to blogging each day, so new goal for myself. Each day I will have a photo post . . . ahh love it!
(I'm gonna put this on Facebook, then all my friends will read it and then they'll smile b/c I'm mentioning them right now . . . and if they post a comment I'll send them a post card . . . see how many comments I get) HA!
SPIN CLASS
No lie this is my favorite 45 minutes of the day. I've been able to go to spin class 2x a week for the past two weeks, and I will continue to do so because it is that fun of a class.
I hear Bob Harper (harper? i think its harper) the male trainer on The Biggest Loser teaches a spin class, and I think I could keep up with him. That would be a dream of mine, to attend one of Bob Harper's spin classes.
Running, workouts, baking, eating healthy and so much more see where life leads this girl.

Panini Heaven
Not too much going on in my life.
This week I decided to make a change in the diet/weight loss area of my life. I'm really gonna take a good look at what I eat and put into my mouth :)
Today for lunch . . .
PANINI
Ingredients:
Ciabatta bread\
Spinach
Red Onion
1/4 Avocado
To Do:
Spread avocado on bread, some how arrange spinach and onions in between bread pieces. Place on panini press . . . oh wait I dont have one of those, I used my george forman mini grill (and then put a pot w/ 3 cans on top of it so it pushed down on the panini). Three minutes then turn over and press again for another few minutes.
Added a side of fruit (strawberries, pineapple and bananas) and made for a beautiful lunch.

For dinner it was zucchini lasagna . . . didnt come out too beautiful looking, but maybe the next time I make it I'll post the recipe.
This week has been super in the workout field :)
- Managed to run 2.75 miles out of 3 (ran for 2 miles straight, then walked for a 1/4 of a mile but finished off with .75 mile run) :)
- My 5k distance time is now at 39:18 . . . which coming from like 45 minutes, makes me feel amazing.
- I accomplished going to a spin class this week, AWESOME, pretty sure I'll be doing spin 2x a week if thats manageable :)
More pictures to come :)

Routines
I'm dying here. I'm not good with a life without routine. Summer is NOT good for me, theres no routine and i lay around the house everyday doing nothing and eating the whole time.
Work week routine:
Wake up
make coffee
get ready
work
come home
hang with dog
workout
go to sleep
Summer days routine
there is none . . . last week i spent money every day b/c i went out with people. Today i woke up at 9, watched television and ate for about 4 hours (i didnt eat for 4 hours, but felt like it), worked for 3 hours with D then came home to watch more television and eat. I should workout tonight, but now that i have Tuesday, Wednesday, Thursday free I'll workout then.
Ahhhhh i dont know what to do with myself. :)
thought today about getting a puzzle, but i'm sooooooo not a puzzle person, every puzzle i've ever seen seems like it was made from a picture created back in 1940's and is boring. Plus what do you do with a puzzle after you finish putting it together????

Asparagus, Celery, Red potatoes, Carrots, Peas, Corn, Garlic
Smelled sooooooo yum!
Filled in my new ramekins.
After baking . . . the apt still smells like these things :)
Super good . . . I could have eaten 2 or 3 of these things.
Updating:
In case anyone is wondering, school is over, so my list of 20 things that need to be accomplished is DONE. Woo hoo! Now i literally have 8 weeks of nothing but relaxing and hanging out, i'm VERY excited for this.
To celebrate summer i decided to go to a Zumba class offered at Lifetime. I'm not going to lie and say i loved the class, however I did survive. I'm not a dancer but I was impressed that I could do the moves that the instructer did (I didnt do them well and no where near perfection, but I did them). I'm convincing myself I need to go 2 more times so I can learn moves and then decide if I want to continue or not even attempt anymore :).
This is NOT me, however its pretty close to what the class looked like.

Pizza :)
If you know me, you know i ALWAYS crave pizza . . . I love it, its not healthy but I love it regardless.
Last night i had a recipe for pizza crust/dough . . . so i decided to try it out.
The first attempt started with yeast and whole wheat flour . . . total fail and after an hour of letting the dough rise I didn't deem it fit to be eaten by me.
So I attempted again and let the dough rise for 2 hours . . .

Toppings: Cheese and broccoli . . . I love broccoli on a pizza, I think its the best.
Review: The crust was def. hard and chewy, needs to be attempted again, however this pizza was better than a frozen one from the store. :)
Update . . . on my to do list.
1. Spaghetti dinner
2. Prom
3. Fieldtrip with me and 13 students (oy vey)
4. Open house at school
5. Awards night
6. Appreciation week (that i need to set up)
7. community service project
8. IEP meeting (run by me)
9. newsletters for JHS and HS (that I need to put together and send out)
10. Annual meeting
11. MN zoo fieldtrip with all HS students
12. NWEA testing
13. SAT 10 testing

17. grade completion
18. long reviews for 3 students

If you notice, not much dough rising action happening . . . not sure what the deal is, but I decided I would attempt the pizza regardless (at this point it was like 9pm and I was hungry after working out).
I realized that after all the kitchen supplies I've bought (cookie press, stand mixer, muffin top tin, giant muffin tin, cookie scoops) that I dont have the one thing I should . . . a dough roller . . . I find it amazing I dont have one of these in my kitchen. So I used a Nalgene water bottle to do my rolling.
Not the best round thing in the world . . . but it worked.

I survived :)
I survived my 10 year reunion and didnt feel like a fake, ignored nobody. I actually just went . . . talked with friends (that i've maintained connection with) and left at 9:30. I've said it once and I'll say it forever more . . . Friday nite events are HARD for teachers . . . you wake up so freaking early (and my day yesterday was a cluster of events) and then you're required to show your face at an evening event without some sort of pause inbetween.
So since I have like 9 days of school left, this is what my list is down to. I actually just enjoy doing the cross out thing, thus the reason why I keep posting this list.

I have Monday off this week and i'm so excited about it . . . however I left school without leaving lesson plans so I cant exactly detach until those are done . . . . I should do them now so I can just stop into school print them off tmr and be done for the weekend . . . . good thought :)
My dating life.
I feel the need to post about my dating life. Its a massive cluster mess of a situation. :) More details to come :)
